PROCESS: Giling Basah, the unique method used in the production of Sumatra coffees, results in a very complete body with a concentrated flavor, adorned with herbal nuances and a spicy finish. It involves removing the parchment from the grain at approximately 50 percent moisture content.
This unique process results in the characteristic flavour profile of Sumatra (low acidity, richness that lingers on the back of the palate and a chocolate finish). Strong notes of cedar, sweet tobacco, chocolate and spices. Wine acidity, consistent and balanced.
